Colorado Jalapeño is a productive, classic-style jalapeño known for its thick-walled pods, dependable yields, and excellent all-purpose flavor. The peppers develop smooth, broad bodies with the familiar blunt-to-tapered jalapeño shape, beginning dark green before ripening to a rich red when fully mature. Some pods may develop attractive corking as they mature.

With approximately 2,500–8,000 Scoville Heat Units (SHU), Colorado Jalapeño provides a manageable medium heat with the fresh, slightly sweet and earthy flavor jalapeños are known for. Allowing the pods to fully ripen to red generally produces a sweeter, richer flavor while maintaining their characteristic jalapeño bite.

The thick, meaty walls make this variety especially useful in the kitchen. Colorado Jalapeño is excellent for fresh salsa, nachos, pickling, grilling, stuffing, jalapeño poppers, hot sauces, and drying for flakes or powder.
